I ate one of these and I believe I can unravel the secret. Know how tacos from Taco Bell are always sort of lukewarm? Well, "spicy lava sauce" is nuclear hot, yet not actually spicy hot, industrial waste, I mean nacho cheese sauce, injected down the middle of such a taco, resulting in a briefly terrifying moment of tongue superheating, which is then damped down by the lukewarm taco. Thus, it was deemed to be like lava. The red coloring is probably the runoff from the cheese reactor, so at least they're recycling.
